Hitokuchi, A New Sake Lounge By Hidden Fish, Opens In Convoy
Hitokuchi, meaning “one sip, one bite”, is a Convoy-based Sake Lounge by Hidden Fish focusing on premium sake pairing with small bite dishes.
After more than three years in development, Chef-owner John Hong launched Hitokuchi to serve shareable, amuse-bouche-sized dishes of luxurious Japanese cuisine, with ingredients sourced from around the globe, including directly from Japan’s renowned Toyosu Fish Market.
Hitokuchi Special Menu
Chef Hong works with premium raw seafood, all bite-sized, with a modern twist. For the hot food, the sake lounge is focusing on small bites paired with a large variety of sake.
Hitokuchi’s menu focuses on umami, a Japanese word for one of the five basic tastes, along with sweet, sour, salty and bitter taste sensations, that is commonly defined as “savoury”. Chef Hong’s dishes are crafted to bring out the best flavors in the ingredients they serve.
