Witherby honors the building’s 1886 history, named after Henry Witherby, the first tenant to lease space in what’s now The Beau Hotel. It’s one of those naming decisions that actually means something rather than just sounding trendy, connecting the restaurant’s future to the Gaslamp Quarter landmark’s past.

The menu Chef Robin has developed draws from his culinary mentors, family heritage, and global travels, blending Mediterranean influences with California’s seasonal produce.

Dishes like Braised Pork Shank, Duck Pot Pie, and Faroe Islands Salmon with carrot-coconut purée show the kind of thoughtful approach that turns a hotel restaurant into a destination worth seeking out.
