Sake Bar Gaga’s Chef Collaboration Series is back for round two, and this time it’s bringing together two very different culinary worlds under one roof.

The series exists to explore one simple idea: how sake can pair with food from cuisines all over the globe, and this next installment is shaping up to be a standout.

A One-Night Takeover

Executive Chef Brian Redzikowski of Kettner Exchange is stepping into Sake Bar Gaga for a one-night-only collaboration.

Chef Brian’s creative take on modern American cuisine, layered with global and Asian influences, makes for a natural match with Gaga’s sake-forward approach to dining.

It’s a rare chance to see his cooking reimagined through an entirely different lens. For fans of Kettner Exchange, this is a chance to experience his food in a setting unlike anything on the regular menu.

A Five-Course Menu Paired With Sake

Guests can expect a five-course prix fixe menu paired with five sake selections, all for $180 per person.

The lineup includes toro and caviar toast, a savory chawanmushi with lettuce and onion “soup,” bacon, and crouton, a langoustine dumpling in Cantonese butter, Flannery beef with peanut mocha, and a three milk cake to close things out.

Each course is paired with a sake selection from Fifth Taste, chosen to complement the flavors on the plate.

At its core, this dinner is about what happens when different culinary perspectives meet in one room. Different cuisine, different perspective, and sake brings it all together.
