Lilo Brings Fine Dining With Global Coastal Soul to Carlsbad Village

Meet Lilo, the newest culinary destination in Carlsbad Village, from the creative team behind Michelin-starred Jeune et Jolie, Campfire, and Wildland.

Officially opening its doors this April, this 22-seat fine dining experience is led by Chef Eric Bost and Restaurateur John Resnick, and it’s already poised to become one of SoCal’s most intimate and imaginative new restaurants.

A Tasting Menu That Travels the World’s Coastlines

At Lilo, expect a 12-course tasting menu that blends global coastal influences with the wild spirit of California. Chef Bost, alongside Chef de Cuisine Dusan Todic and Pastry Chef Madeline Biehl, has created a seasonal journey where house fermentations, dry-aged elements, and soulful storytelling meet on the plate.

Highlights range from Squab with burnt vanilla oil and laminated brioche, to Dry-Aged Wild Turbot with Pineau sabayon and koji, and whimsical desserts like blackened banana with shiro miso or a warm beignet filled with toasted rice cream.

The menu is refined yet full of heart—built for lingering, conversation, and connection.

Elevated Sips, Rare Finds, and Thoughtful Pairings

The beverage program, led by Savannah Riedler and Andrew Cordero, brings in everything from under-the-radar California wines to vintage spirits and zero-proof cocktails like the Okinawa Spritz. Expect pairings that don’t just complement—they elevate.

A Space Designed for Connection

Designed by Bells + Whistles, the space is every bit as considered as the food. Earth-toned textures, a serene garden courtyard, and a 14-seat chef’s counter create a warm, immersive vibe. It’s cozy, it’s coastal, and it’s Carlsbad through and through.
