TRUST Restaurant Group just opened À L’ouest, their 13th restaurant and most ambitious project to date, on the prominent corner of 30th and University in North Park.

The 5,000 square foot nouveau-brasserie reimagines classic French cuisine with the signature wood-fired techniques that Chef Brad Wise and TRUST Restaurant Group have built their reputation on.

This isn’t just French food transplanted to San Diego – it’s quintessential French dishes infused with the depth of flavor that can only be accomplished through live fire.

Brasserie Classics Through Chef Brad Wise’s Lens

À L’ouest’s menu is rooted in classical techniques and brasserie staples, pulling inspiration from Chef’s other concepts while maintaining meticulous attention to detail and unparalleled integrity when it comes to sourcing.

As butter is the foundation of French cuisine, À L’ouest features Le Beurre Bordier Butter, cultivated in Brittany from grass-fed milking cows, hand-kneaded with wooden paddles, and prized for its thickness and richness.

Chef Wise’s Steak Frites lets you choose your own steak (a la TRUST Restaurant Group’s popular Rare Society), which is then finished with a rich stock made from three types of peppercorns, cognac, bone marrow, and sherry.

French Onion Soup gets a bold twist with broth made from braised oxtail and finished with a housemade baguette crouton and a blend of Gruyère and Cooper Sharp cheese, adding richness and a subtle nod to Chef’s East Coast influences.

Smoked Mussels trade steam for cold smoke, layered with vadouvan and sesame chili crunch.

Raw Bar, Charcuterie, and Old-World Garde Manger

Inspired by Parisian seafood towers and old-world garde manger traditions, the Raw Bar and Charcuterie programs feature house-made terrines, pâtés, and chicken liver mousse, along with thoughtfully sourced seafood, reinforcing the brasserie ideal of abundance and variety.

It’s the kind of spread that makes you want to order everything and share it all.

Nearly Three Dozen Cocktails

With nearly three dozen cocktails, this is the largest cocktail program TRUST Restaurant Group has launched to date. Beverage Director Jess Stewart and Bar Lead Chris Dunsmoor drew inspiration from French flavors, spirits, and early-20th-century techniques, reinterpreted through a modern, playful lens. Highlights include:

  • Loire Valley Girl, an aromatic blend of gin, pear, cucumber, rose, and pink peppercorn
  • Grand Chancellor, a French-leaning Old Fashioned led by cognac
  • Bon Chic Bon, a brasserie-ready cosmopolitan built with lacto-fermented cranberries and housemade Meyer Lemon vodka

Martini Service is a ritual at À L’ouest, featuring a selection of sippers designed around one of the five basic tastes – sweet, salty, savory, bitter, and sour.

Served ice-cold in a sidecar-style presentation, half the drink arrives in the glass with the remainder chilled on ice alongside. It’s a playful, contemporary approach that’s stylish without being precious.

150 Wines With 80 Percent Under $100

Wine Director Ben Zuba and Sommelier Patrick Holihan curated a wine program built around French wines with a focus on France’s eight major regions, including Burgundy, Bordeaux, the Loire Valley, Beaujolais, and the Rhône, complemented by thoughtful selections from California.

Wines are chosen for texture, structure, and intensity, meant to stand alongside the kitchen’s bold seasoning and live-fire cooking. The list features 150 selections with roughly 80 percent priced under $100, reinforcing the idea that exceptional wine should feel inviting, not intimidating.

Organic and biodynamic producers are prioritized where possible, reinforcing a sense of place, intention, and vitality in the glass.

Parisian Romance Meets Southern California Living

Designed by Ralitsa Kombakis of STUDIO RALLOU, À L’ouest is designed to feel lived-in from the moment it opens.

The dining room unfolds in layered moments with arched openings, custom metalworks, and architectural details that create rhythm and intimacy. Banquette seating softened with integrated greenery anchors the room as a communal focal point.

Expansive corner windows blur the line between indoor and outdoor, allowing the energy of North Park to flow throughout the space. The private dining room is a jewel-box space defined by a sculptural chandelier and a glass floor that adds an unexpected moment of floral drama.

Even the restrooms are part of the overall experience, featuring patterned tile, vintage-inspired artwork, and deep green tones.
