Refreshing Rooftop Escape, Borrego, to Open Atop Hotel Indigo in Gaslamp Quarter
Hey there, Gaslamp gastronomes—get ready to soak up the sun, suds, and seriously elevated Cali bites at Borrego Kitchen & Cocktails, the brand-spankin’ new rooftop playground crowning Hotel Indigo, come March 28th!
Located on the ninth floor of Hotel Indigo, San Diego Gaslamp Quarter, the restaurant and bar is inspired by the city’s distinct setting and will celebrate Southern California’s culinary heritage and community influences.
Borrego Kitchen & Cocktails: A Culinary Tribute to San Diego
Inspired by the Borrego desert, the rooftop bar and restaurant, located on the completely redesigned ninth floor (previously Level 9) will transport guests into a vibrant outdoor destination.
Reflective of the city itself, Borrego and accompanying private meeting and event parlors provide solace from the ocean to the west and desert to the east, with the added bonus of a thrilling view of Petco Park.
“We are incredibly excited to debut Borrego this spring as an homage to San Diego’s culinary heritage and culture,” said Oliver Kahf, general manager of Hotel Indigo San Diego.
“We envision Borrego as a rooftop destination for both locals and visitors, one where individuals can come one night for drinks and the next for a meal while taking in panoramic views of the city and Petco Park. We look forward to welcoming everyone on March 28.”
A desert-inspired oasis, the rooftop restaurant will offer dynamic food and beverage pairings rooted in the city’s diverse cuisines.
The menu will take you on a playful culinary tour highlighting regional ingredients used in uniquely delicious ways and inspiring signature dishes.
Innovative Mixology
The local and regional influences continue through the robust beverage program created by Lowder Tascarella Hospitality – LTH.
From surprising spices such as cumin, cacao, and ancho chili to a wide selection of local beers, the cocktail menu will offer signature cocktails as well as a dedicated selection of zero-proof offerings.
Beverage highlights include:
- Espresso de Olla—this modern take on traditional Mexican coffee includes local vodka, Arabiaca and Robusta espresso liqueur, Mexican Fernet, spiced chocolate, and orange peel
- Baja Bloom—inspired by the spirited zest of the Baja Peninsula, this gin-forward cocktail features local gin, chili-infused mescal, roasted pineapple, lemon, and elderflower
- Vision Quest—capturing the essence of the vast and diverse landscapes of San Diego, this bright cocktail includes Sotol, Marigold, fresh lime, cactus soda, and freshly grated nutmeg
Versatile Elegance
Borrego and Hotel Indigo’s ninth floor will also feature all-new private dining and meeting spaces with outdoor accessibility. With adjustable floor plans and flexible indoor-outdoor arrangements, the rooftop will be a classic venue for a celebration or intimate gathering.
Borrego Kitchen & Cocktails will include three stunning meetings rooms that are ideal for social and corporate events showcasing the same great views of San Diego and Petco Park.

Debuting on the San Diego Padres’ Opening Day, March 28, 2024, Borrego Kitchen & Cocktails is the ideal rooftop retreat to kick off the baseball season.
Borrego will be open Saturdays and Sundays between 10AM and 12AM including brunch from 10 AM to 2 PM and Monday through Friday from 4 PM to 12 AM.
