Hitokuchi Sake Lounge Named One of America’s Best Restaurants of 2023
Convoy-based Hitokuchi Sake Lounge and Restaurant, operated by Hidden Fish owner, Chef John Hong, was recently recognized as one of America’s Best New Restaurants of 2023 by Esquire Magazine. We can’t help but agree.
After more than three years in development, Chef John launched Hitokuchi to serve shareable, amuse-bouche-sized dishes of luxurious Japanese cuisine, with ingredients sourced from around the globe, including directly from Japan’s renowned Toyosu Fish Market.
Hitokuchi Special Menu
Hitokuchi, meaning “one sip, one bite”, pairs premium sake with small tapas-style dishes made with luxurious ingredients.
Hitokuchi’s menu focuses on umami, a Japanese word for one of the five basic tastes, along with sweet, sour, salty and bitter taste sensations, that is commonly defined as “savoury”. Chef Hong’s dishes are crafted to bring out the best flavors in the ingredients they serve.
