The Sushi Stand is an elevated, fast-casual California-inspired sushi restaurant founded by the owners of Le Parfait Paris, Guillaume and Ludivine Ryon.
Designed as an elevated, grab-and-go sushi concept offering a delicious, practical and affordable lunch or dinner options, The Sushi Stand uses custom recyclable boxes for guests to take their sushi with them, whether to the office, on a picnic or wherever they are headed to.
Crafted in front of customers, each sushi creation is presented to guests in an artfully designed box that is made from 100% recycled and compostable ivory paper instead of single-use plastic packaging that negatively impacts the oceanic ecosystem.
The menu features a unique blend of tastes and cultures, leading to a playful and mouth-watering sushi experience.
Executive Chef, Jerald Tolentino, uses his own techniques to create premium sushi rolls that ensure there is something for everyone to enjoy, from the sushi connoisseur to the newbie.
Sushi roll highlights
- Heat Waves made with kanikama, cucumber, avocado, seared togarashi, tuna, ponzu, green onion and sesame seeds.
- Fresh Prince made with spicy tuna, cucumber, avocado, salmon, lemon slices, ponzu, micro cilantro and sesame seeds.
- Orange Crush made with spicy kanikama, tempura asparagus, avocado, salmon, orange miso sauce, micro cilantro and sesame seeds.
Sourcing only the freshest and most high-quality ingredients, The Sushi Stand uses only fresh fish and local ingredients for every roll.

The Sushi Stand is open from 11AM to 8PM, Sunday to Thursday, and 11AM to 9PM on Friday and Saturday inside Liberty Public Market located at 2820 Historic Decatur Rd, San Diego, CA.
