Puesto Meets Ballast Point In One Epic Dinner

‘San Diego’s Best: When Puesto Met Ballast Point’, the brainchild of Katy Smith, Puesto’s executive creative chef, brings together two of San Diego’s biggest names to showcase modern Mexican cuisine paired with Ballast Point brews. The five course beer pairing dinner is happening at Puesto at The Headquarters.

Prior to joining Puesto in 2016, Katy was the test kitchen director and culinary assistant to Rick Bayless. She received national recognition as culinary director for the James Beard-winning podcast, The Feed, and as kitchen director for Bayless’ Emmy-nominated, Season 10 of PBS Mexico’s One Plate at a Time.

At Puesto, she takes frequent R&D trips throughout Mexico and is constantly experimenting with new recipes to offer a fresh, innovative spin on authentic Mexican cuisine (rough job!).

As Puesto expands from San Diego to Orange County and now Northern California, they’re committed to working with only the best partners on creative, one-off dining experiences in each market. Enter Ballast Point, whose beers are well known and well loved.

The evening’s menu is varied and takes inspiration from a variety of regional Mexican cuisines:

Central Mexico
Tacos El Pastor – achiote marinated pork, grilled pineapple paired with Pineapple Sculpin

Baja
Callo de Hacha Laminado – thinly sliced raw scallops, lime, Meyer lemon caviar, cilantro salt, radishes, avocado emulsion, black garlic chile oil paired with Bonito Blonde

Puebla
Black Cod in Pipian Verde, Ayocote beans and nasturtium leaves paired with Manta Ray IIPA
