Private Dining At Pueblo In Pacific Beach Will Make You Skip The Normal Restaurant Routine

What do you get when a chef and a brew master unite to create a menu for one night of dining? You get one hell of a meal, and a fantastic experience too! Pueblo (877 Hornblend St, Pacific Beach) is new to the restaurant scene in San Diego, and their ideas about dining are as fresh as their menu’s ingredients.

That’s why when we got wind of the private dining event they’re hosting on Thursday January 26th, we had to get the scoop. We spoke with Proprietor Mark Oliver and Chef Sean McCart about this event (and future events) and why you should strongly consider attending.

Pueblo is a unique restaurant, and one visit there will make it easy to understand why these private dining events are perfect for their layout. The fact is the restaurant is large, complete with patio dining on both the first and second floors. It’s made for a concept like this, and Chef Sean told us about his vision of private dining at Pueblo.

“I want it to be an experience, that’s what I’m trying to create,” he says. Every restaurant patron has heard that before, but then Chef Sean goes into detail of what he means by explaining his menu. This month, Pueblo has combined forces with Belching Beaver Brewery to create an amazing menu, available for only one night of dining.

Chef Sean will serve a 3-course meal, and each course is paired with a specific beer to match the unique flavors.

Dish 1 is a Green Papaya, Mango Shrimp Salad with Kieffer Lime Vinaigrette. Then you’ll set our taste buds off when you sip on a Mango IPA, and smile as the flavors combine on your tongues. A beer to “wash it down” is not what their after; it’s a part of the dish itself.

Dish 2 is the main course, and we are very much looking forward to it. Every Sunday Pueblo has a pig on a spit roasting and marinating in deliciousness right out front. Chef Sean will shave the meat himself and serve Carnitas Tacos. For this event he’s doing the same thing, taking pig leg and serving it to all who attend.

When you make a public announcement about a private dining event, people from all over come running. “We’ll serve it family style, so everyone there can have a chance to interact,” he tells me. The meat will come on personal plates, but we’ll find the accoutrements that accompany a taco all across the table. Not only that, but the head chef and brew master will be right there to talk shop.

Oh yeah, these Pig Leg Carnitas Tacos will be served with a Horchata Imperial Stout. Pueblo’s cuisine is Baja and Coastal, so combining with a beer that’s a salute to flavors of Mexico is a fantastic idea.

Dish 3 is the desert, and Pueblo is serving a Peanut Butter Chocolate Bread Pudding. If that’s not delicious enough, Belching Beaver is combining this dish with a Peanut Butter Milk Stout.

The cost for this event is completely reasonable. In fact, if you ordered 3 beers and 3 dishes at just about any restaurant in San Diego, you’d pay more than for this meal. Don’t expect that to last though, as Pueblo builds its brand.

“We’re in the process of solidifying our event calendar,” Mark Oliver tells me. They will include, “Baja wine dinners, different breweries and a monthly chef’s tasting menu.” Next month, Pueblo plans on combining with local brewery Mike Hess to deliver another creative menu served for one night only.

Tentatively, expect these meals to come around once a month, during the last week of the month. Simply call Pueblo and ask for Lyndsay Blanchard for information about private dining events. You can also call to pay a flat fee (for the whole meal, even gratuity) and secure your seat. But don’t delay, these dining experiences are meant to be intimate. That means seating is limited, so you better act fast!
