Herb & Sea Hosts 2nd By-Catch Dinner Benefiting WILDCOAST
Herb & Sea, Encinitas’ beloved seafood-centric restaurant, is celebrating their long-term partnership with WILDCOAST, an international non-profit that conserves coastal and marine ecosystems and addresses climate change through natural solutions, by hosting a special five-course by-catch dinner on Monday, April 24th.
On the heels of Earth Day and in step with WILDCOAST’s local efforts and conservation undertakings in Baja and Mainland Mexico, this special dinner will highlight sustainably-caught local fish and recenter Herb & Sea as a hub for education and fundraising.

Herb & Sea by-catch dinner presents “Fish & Fire”
For this special “Fish & Fire” by-catch dinner, Herb & Sea’s new culinary dynamic duo, Chef Carlo Guardado and Chef Marissa Williams, will be leaning into their respective specialities: live-fire cooking and whole fish butchery.
The evening’s menu will exclusively utilize local by-catch, effectively turning non-targeted species caught by local fisheries into memorable and sustainable dishes.

The evening will begin at 6PM with welcome cocktails from Solento Tequila along with tray-passed bites, followed by a five-course dinner menu exclusively utilizing local treasure fish, lesser-known and non-targeted species caught in San Diego’s fisheries often called “by-catch,” with wine pairings.
Due to the nature of by-catch, the menu will be fully dependent on what is available the morning of the event. Potential fish includes Opah, Sheepshead, Small Fish, Rock Fish, White Fish, and Halibut.

An advocate for Wildcoast
Partnering with local fisheries, the restaurant will serve as a hub for education and fundraising for WILDCOAST’S local efforts, as well as efforts in Baja and mainland Mexico.
WILDCOAST’s CEO Serge Dedina, along with local scientists and fishermen, will be in attendance to provide background on WILDCOAST’s mission and information on protecting our fisheries. All profits from ticket revenue will go towards funding WILDCOAST’s efforts to conserve our planet’s most critical ecosystems.

With a focus on sustainable, fresh seafood, Herb & Sea will continue to offer a rotating WILDCOAST Fresh Catch menu item after this fundraising dinner, donating $5 from each dish sold.
