Vistal, the Baja-inspired hotspot at InterContinental San Diego, is teaming up with local sustainability champions Chula Seafood for a one-night-only Swordfish Dinner.
From Sea to Table: A Culinary Journey
They’re kicking things off in style with sunset cocktails on Vistal’s terrace. As the sky turns golden, get ready for some serious culinary theater. The seafood savants from Chula Seafood will be breaking down a whole local swordfish right before your eyes!
Five Courses of Swordfish Bliss
After the show, dive fork-first into a five-course feast:
- Start your engines with a Swordfish Bone Marrow Gazpacho. Yes, you read that right—bone marrow from a fish! It’s a flavor explosion with yellow cactus fruit, farmer’s market tomatoes, and a zingy finger lime kick.
- Next up, Swordfish Escabeche featuring olive oil confit swordfish belly.
- Third on the menu is Smoked Swordfish Collar Filled Ravioli. Yum!
- The main event? Swordfish Al Pastor with poblano polenta and pineapple butter.
- Cap off the night with an Espresso Chocolate Truffle Cake. There’s also swordfish eye ice cream! It’s either culinary genius or madness; either way, we’re here for it.
