James Beard Smart Catch Leader Teams Up With WILDCOAST For World Oceans Day Dinner
On the Menu: Sustainable Seafood
Guests will get the chance to indulge in a four-course prix-fixe menu that brings together the worlds of sustainability and seafood.
Chef JoJo will be preparing a menu that features “no-kill” caviar, line-caught tuna, Baja oysters, and Santa Barbara black cod. He’ll be using all of his creative talents to ensure that every piece of fish is put to use, such as using the scraps from the Tuna to create a Tonatto, which will dress the charcoal-grilled cauliflower served alongside the main entrée.
The menu is sourced from local purveyors such as PureFish, a San Diego-based seafood distributor that holds sustainability and conservation to the highest standard.
Founder of PureFish, Shahin Mobine, will be joining the feast. Mobine will discuss the importance of sourcing sustainable seafood, in conjunction with WILDCOAST co-founder and Executive Director, Serge Dedina, Ph.D. Dedina will be speaking about WILDCOAST’s conservation efforts.
20% of ticket sales will be donated directly to WILDCOAST’s ocean conservation programs.
