Finca Debuts Full Liquor License & New Cocktail Program

Exciting news for North Park’s cocktail enthusiasts! Finca, the charming neighborhood spot that made waves with its wine and beer offerings, is stepping up its game. With a newly acquired full liquor license, the restaurant has unveiled a vibrant new cocktail menu that’s as fresh and inventive as San Diego itself.

SoCal-Inspired Cocktails by Matt Gisler

Bar Manager Matt Gisler has infused his Southern California mindset into classic cocktails, reimagining them with bright, botanical flavors that celebrate the region’s lush produce. Expect profiles that are vegetal, floral, and downright delightful, elevating each sip into a mini-vacation.

Here’s a taste of the highlights:

  • G&T – A tribute to Finca’s owners and SoCal’s citrus bounty, featuring Storyhouse California Coastal Gin, lemongrass, eucalyptus, mint, and lime
  • Piña Margarita – Gisler’s take on the San Diego staple, brightened with roasted pineapple and Suerte Blanco Tequila
  • Daiquiri Plus – Fennel-infused syrup, rhum agricole, and Hamilton White ‘Stache Rum for a sophisticated twist
  • Olo Old Fashioned – A Spanish-inspired riff with Oloroso sherry syrup, bourbon, and hints of dried figs and dates
  • Hibiscus Negroni – A floral and citrusy nod to the region’s gardens and Gisler’s childhood memories in Orange, CA
  • Early Aughts – A sherry cobbler-inspired refresher, paying homage to Finca’s renowned sherry program

Bar Takeovers to Celebrate

Finca isn’t stopping at fresh cocktails—it’s hosting local bar stars for guest takeovers. First up: Nolita Hall’s Bar Manager, Keenan Anaya, will bring his magic behind the bar on June 8 from 3 PM to 5 PM, with future collabs already in the works with Happy Medium and Crafted Coupe.
