Rare Society Solana Beach’s New Cocktail Menu Takes A Meaty Twist

Trust Restaurant Group’s newest venture, Rare Society Solana Beach, has introduced an elevated cocktail program to the Cedros Design District paying homage to the traditional steakhouse concept. Helmed by Bar Manager Colin Berger, who taps inspiration from his experience leading Michelin-rated programs, brings a unique mix of handcrafted libations to the menu.

Guests will find a refreshing take on timeless spirits, and classics with a twist such as The Rare Old Fashioned which comes garnished with charred rosemary, crispy bacon, largo, and wagyu bourbon cherry to highlight the flavor of a dry-aged, fat-washed bourbon. The fat-washing process takes 24 hours, reflecting the thoughtful layering of flavor that is prevalent in every sip.

Rare Society’s cocktail program includes:

The Rare Old Fashioned (dry-aged fat-washed bourbon, rosemary citrus oleo saccharum, gentian bitters): This libation is unique to Rare Society, garnished with charred rosemary, crispy bacon, largo, and wagyu bourbon cherry. The fat-washed bourbon mirrors those same flavors so prevalent in the culinary program.

Rye Almondine (rye whiskey, sloe gin, pimento dram, orgeat, lime): The complementary flavors in this signature drink highlight smooth tones for a fresh, yet creamy libation.

Manhattan (American whiskey, Amari, dry curaçao, vermouth): The bitterness and herbal undertones of this classic drink is the perfect, smooth pairing to any premium cut on the Chef’s board.

75 and Sunny (tequila, Aperol, dry curacao, cranberry, thyme, lime):  The combination of tequila and Aperol, with a hint of fresh fruit, creates a thirst-quenching cocktail perfect to enjoy on a quintessential San Diego evening.

All of the Gin Joints (London dry gin, olive brine, blue cheese olives): With flowery aromatic characteristics, this London dry gin is one of those special liquors that levels up any meal.

The Coaster (rye whiskey, aged rum, grenadine, lemon, bitters, egg white): This twist on the classic whiskey drink is both refreshing and rich.

Solana Highlands (scotch, cherry, honey, sage, lemon): The fresh herb and scotch combine for a soul-warming sipping experience.

Bookkeeper (Mezcal, cinnamon, grapefruit, lime): The smokiness of the Mezcal, combined with the hint of cinnamon creates a unique balance of smoky and sweet.
