Salt & Straw’s Vault Menu Returns February 5th

Salt & Straw’s Annual Vault Ice Cream menu returns February 5th for a limited-time, featuring five of Salt & Straw’s most beloved flavors from the past decade.

Kicking off a year-long celebration of the artisanal ice cream brand’s 10-year anniversary, the concept for this year’s Flavor Vault menu centers around a 10-year reunion. The five flavors were carefully selected, brought back into rotation not only for being beloved flavors, but for being notable “firsts” over the past decade of Salt & Straw history—or decade of decadence.

This year, Malek dove deep into the vault to bring back to the scoop counter the most pivotal recipes. These are some of Salt & Straw’s most epic flavors, the ones essential to the brand’s innovation and creative process, capturing the support of local food artisans through a Salt & Straw lens.

The Flavor Vault Series menu will be available online for nationwide shipping, in scoop shops, and for local delivery starting February 5th to March 18th.

Salted Caramel Cupcake

Our friends at Seattle’s beloved Cupcake Royale shared their phenomenal Salted Caramel Cupcake recipe in exchange for the skinny on making ice cream. Hunks of chocolate cake slathered with salted caramel frosting and cake crumbs soak up the fleur de sel-spiked cream for a flavor that’s reminiscent of ice cream cakes from birthday parties past.

FUN FACT: Inspired by cupcakes from Cupcake Royale in Seattle, this was the first ice cream Salt & Straw made using a baked good stir-in.

Cinnatopia Cinnamon Bun

“Cinnamon roll, cinnamon gaweyness with ribbons of frosting!” proclaimed Ella, the second-grader who dreamt up this runaway hit for our Student Inventor Series. It preserves each glorious part of the classic bun—fluffy roll, gooey filling, and cream cheese frosting—in cinnamon ice cream.

FUN FACT: One of the most successful flavors from the beloved Student Inventors series.

Strawberry Tres Leches

A study in strawberries: roasted strawberry ice cream, vanilla-y strawberry jam, gooey tres leches cake.

FUN FACT: One of the first classic flavors created specifically for the San Francisco Bay Area market.

Brown Ale & Bacon

When Salt & Straw opened, maple bacon was everywhere, so we would have been remiss to completely skip the trend. In true early form, we wanted our take to be unique, so we went to an unconventional partner for the answer: a brewer.

Brown ale has a sweet maple-y flavor. This flavor marked our first-ever collaboration with a local brewery, now a favorite of ours, and presented the challenge on how to mimic their brewing process in ice cream.

FUN FACT: This was the first ice cream created in partnership with a brewery and was one of the first 8 flavors ever created — originally served when Salt & Straw first started as a cart.

Lemon Cheesecake Crumble (v)

Creamy cashews are carving out a niche in vegan cheese culture with a lush texture you won’t believe is dairy-free. We blend the loveliest cheeze around with coconut yogurt and lemon zest for a tart cheesecake swirl, then make an almond crumble reminiscent of graham cracker crust. The satin cheesecake gets layered into a salted vanilla coconut ice cream.

FUN FACT: Appeared on the first-ever Vegandulgence® menu.
