Seabreeze Craft Chocolates is About to Make Your Sweet Tooth Very Happy

Seabreeze Craft Chocolates has been quietly perfecting the art of small-batch chocolate making, and now they’re launching their Summer Pastry Pop-Up that has us genuinely excited.

This new venture brings handcrafted pastries that showcase their signature chocolate in ways we haven’t seen before, dropping twice weekly throughout the season.

The Drop System That’s Going to Have Us Planning Our Weeks

Here’s how it works: every Monday and Thursday at 11 AM until August 21, Seabreeze releases a brand new, exclusive pastry that’s available for just one day.

We’re talking chocolate chunk banana bread, Dubai chocolate sandwich cookies, honeycomb apple peach puff tartlets with dark chocolate drizzle, and dark chocolate soufflé—each one designed around their ethically sourced chocolate.

What makes this approach so compelling is the limited nature of each release. You can’t just walk in whenever and expect to find the same selection. Instead, you’re getting something completely fresh and exclusive, made in small batches by someone who clearly knows what they’re doing.

The Chef Behind the Magic

Leading this pastry adventure is John Kwiatkowski, who joined Seabreeze in early 2024 after discovering the brand as a holiday gift—which is honestly the kind of origin story we love.

He’s a graduate of Grossmont College’s Pastry Arts Program, and his approach to each creation centers around one key principle: letting Seabreeze’s chocolate be the star.

“Every pastry on this menu starts with our chocolate,” John explains. “Whether it’s baked into a cookie, whipped into ganache, or layered into a tart, I designed each recipe to showcase the flavor and quality of our chocolate—and the values behind it.”

The connection to Seabreeze’s direct trade relationships with cacao farmers means every bite supports ethical sourcing practices. But beyond the feel-good factor, these pastries are designed to highlight the nuanced flavors that come from high-quality chocolate.
