SD’s Culinary Rising Stars Join Chef’s Collaboration Dinner At Provisional Kitchen
Two of San Diego’s culinary rising stars, Executive Restaurant Chef Christopher Gentile of Rancho Valencia, and Pendry San Diego Executive Sous Chef Brandon Sloan of Provisional Kitchen, will combine their talents for a Chef’s Collaboration Dinner to celebrate the flavors of fall.
Menu highlights
A special five-course dinner will feature peak fall produce, artisanal wine pairings, and a taste of each chef’s incredibly skilled palate.
Fall Snacks: Maple Squash Gougère, Chanterelle Toast, Pork Belly-Basil Persimmon Skewers
Ravioli Doppio: Doppio mascarpone, sweet pumpkin, brown butter, truffle honey
Meyer Lemon Ricotta: California honey, chili oil, lemon oil, fennel pollen, toasted focaccia
Maine Lobster Roll: Nori brioche, yuzu aioli, wasabi foam, compressed celery
Caramelized Apple: Almond cake, caramel mousse and vanilla cremeux
