Herb & Sea Invests Big In Young Up & Coming Chef, Appointing Aidan Owens As Executive Chef

Herb & Sea, a culinary gem nestled in the heart of Encinitas, is thrilled to announce the appointment of up and coming culinary star Aidan Owens as its new Executive Chef.

Hailing from Byron Bay, Australia, Chef Owens brings an array of international influences, a deep-rooted passion for farm-to-table cuisine, and a flair for Mediterranean flavors to the vibrant Southern California dining scene.

Trifecta of young chefs leading the way

Previously overseen by the exemplary executive sous chef team, the restaurant is welcoming Aidan Owens as its first Executive Chef in nearly two years.

With the super strong presence of Chef Tara Monsod at Animae and Chef Carlos Anthony at Herb & Wood, Chef Aidan Owens completes the trifecta of Puffer Malarkey Collective’s young and vibrant Executive Chefs leading the San Diego dining scene.

Chef Aidan Owens is bringing his passion for fermentation, breadmaking, and vibrant, internationally-inspired dishes to the table. Expect bright flavors, house-made vinegars, and fresh, local herbs in his creations.

Guests can expect to see new dishes developed by Chef Aidan Owens grace Herb & Sea’s menu in the next month, just in time for local’s summer, and they can join Chef Owens along with Brian Malarkey for a celebratory seafood BBQ brunch and beach cleanup at Herb & Sea on September 10, as a part of the Del Mar Wine & Food Festival.
