Chef Collaboration Dinners & More Await As Pendry San Diego Welcomes Fall

Provisional Kitchen at Pendry San Diego is hosting Chef Collaboration Dinners in October where guests and locals can delight in Fall-forward dishes by talented chefs.

Join Executive Sous Chef Brandon Sloan of Provisional Kitchen and Executive Chef Christopher Gentile of Rancho Valencia for a special five-course dinner menu featuring peak fall produce and wine pairings at Provisional Kitchen!

Menu highlights include:

  • Squash Blossom (with lobster mousse)
  • Pan-Seared Hokkaido Scallop (with prosciutto san danielle broth, pecorino foam, and Kaluga Caviar)
  • Potato Gnocchi (with roasted pumpkin, bone marrow, and nasturtium)
  • Olive Oil Poached Turbo (with caper, preserved lemon, and kohlrabi risotto)
  • Sticky Toffee Pudding (with ginger Sorbet, tahini tuile, and orange diplomat)

Additional ala carte menu items will also be available, including  potato gnocchi-roasted pumpkin pasta, veal meatballs and more.

Reservations can be made here. The menu is priced at $100 per person and wine pairings are available at an additional charge.

Chef Collaboration Dinner at Pendry San Diego

Executive Sous Chef Brandon Sloan of Provisional Kitchen is back with an exclusive four-course dinner collaboration with Executive Chef Drew Deckman of Deckman’s, located in Valle de Guadalupe.

Delight in a “Baja meets Southern California” inspired dinner with menu highlights including:

  • Porcini Carpaccio (with poached quail egg, jabujo and ham vinaigrette)
  • A Trio of Baja Oysters (on the half shell, capeado with ponzo, and cold soup with tarragon)
  • Lamb Neck Agnolotti (with carrot lamb jus, brassicas, and parmigiana reggiano)
  • California Squab (with parsnips, chanterelles, jus salmis)

Additional menu items will also be available, including veal meatballs, roasted Jidori chicken breast, and Chapuline gnocchi with Chihuacle Cream.
