Fairmont Grand Del Mar Transformed With Opulent Upgrades

Fairmont Grand Del Mar unveiled their newly reimagined lobby lounge, library, and bar this month.

In partnership with Los Angeles-based design firm Bishop Pass, the luxury resort’s transformative renovation continues, drawing inspiration from opulent Italian palazzos, while creating an intimate space for gatherings.

“The Fairmont Grand Del Mar has long been a place of timeless opulence and luxury, with magic unveiled at every corner of the property. In keeping with that tradition, our newly renovated lobby lounge sets the tone for intimate gatherings, elevated programming, and exclusive food and beverage offerings.”

“Guests can expect one-of-a-kind experiences that make for an unforgettable visit,” said Nathan Pierce, Director of Operations at Fairmont Grand Del Mar.

Opulent Design and Features

The refreshed spaces feature a color palette rooted in gold with accents of green and deep burgundy, executed through textured textiles and leather.

New neo-baroque and rococo detailed furnishings have been added, including the installation of Venetian glass chandeliers in the main lobby.

Lobby bar enhancements include the addition of a custom mural inspired by the Los Peñasquitos Canyon Preserve, a banquette table, and a series of flexible dining tables, creating a local sense of place to encourage connection.

Home to a variety of programming, the lobby lounge acts as a gathering place to enjoy light bites, specialty cocktails, high tea service, and live entertainment.

The new bar menu features tapas-style dishes, craft cocktails, exclusive spirits, and a unique wine selection.

In partnership with Warwick Bookstore, the library features a curated selection of books to explore throughout your visit. Other enhancements include a large-screen television and a private liquor program featuring top-rated whiskies, bourbons, and cognacs.

A New Culinary Experience at Amaya

Set to debut alongside the lobby lounge renovations, Amaya at Fairmont Grand Del Mar brings a new, French brasserie-inspired dining experience.

Executive Chef Bryn McArthur and Chef Roman Garcia are at the helm of Amaya’s new culinary operations. Both bring a wealth of experience and accolades to the kitchen.

Chef Bryn McArthur most recently held the prestigious title of Chef de Cuisine at The Savoy in London, and Chef Roman Garcia joins Amaya from Selby’s in Atherton, California, which earned a Michelin star during his tenure as Chef de Cuisine.

Under the direction of the distinguished culinary team, the new menu features a unique twist on classic French cuisine driven by the pulse of the season, using southern California’s freshest ingredients from local farms and waters.

The dishes infuse modern skills into beloved flavor combinations, honoring the Parisian enthusiasm for delicious food, good company, and beautiful things.

“We are excited to give Amaya a new culinary footprint. While the Fairmont Grand Del Mar was originally built around opulent Mediterranean style and architecture with exotic influences, the new Amaya reflects the French influences of the space while integrating seafood dishes inspired by the South of France.”

“The restaurant has several private dining rooms named after wine regions in France, and we thought it would be great to honor that by creating a space where everyone is welcome, feels at home, and enjoys classic and contemporary French Brasserie dishes,” said Chef Roman Garcia of Amaya.

At the newly refreshed Amaya, you can enjoy a variety of French bistro staples such as Frisée Aux Lardons, Croque Monsieur, Steak Frites, and Escargot Vol-au-vent.

Dishes with a contemporary flair include:

  • Pâté Maison, a country chicken pâté served with grainy mustard and pickled vegetables
  • Scallop Crudo with green chartreuse, pear, apple, and preserved lemon
  • Honey lacquered Duck Crown with turnips and lentil du puy
  • Bouillabaisse with venus clams, scallops, striped bass, and young fennel
  • Wild mushroom Parisienne Gnocchi

You can dine on Amaya’s shaded terrace surrounded by fragrant blooms or in the convivial atmosphere of Amaya’s indoor dining room, outfitted in classic brasserie red.
