La Valencia’s Earth Month Features Exclusive Pairing With Rob Machado’s Solento Tequila

Local sourcing is an investment in the health and future of our planet. Toast to Earth Month with a special local pairing of La Valencia’s locally-sourced Tuna Belly Crudo and USDA-certified organic Solento Tequila, co-founded by world-renowned professional surfer and environmental activist, Rob Machado.

La Valencia’s Earth Month with Solento Tequila

The limited-time pairing ($72) is available at La Valencia during Earth Month and includes a flight of three expressions.

The new, locally-sourced offering pairs award-winning, small-batch Solento Tequila, also gluten-free, additive-free and vegan, with Executive Chef Fabian Aceves’ crudo featuring a bluefin tuna (dressed in a California olive oil, local citrus aguachile, and local farmers’ market herbs) which has been live caught and finish “ranched” off the coast of San Diego, sourced by San Diego-based sustainable seafood supplier, PureFish. The ultra-fresh tuna goes from sea to table in less than 48 hours.

La Valencia’s Earth Month pairing features a Tuna Belly Crudo, along with a flight of Solento’s Blanco (unaged), Reposado (aged 9 months), and Añejo (aged 18 months) tequilas.
