Beverage Director, sommelier, and mezcal expert Jeremy Simpson at Campfire and newly Michelin-minted, Jeune et Jolie, works alongside Executive Chef Eric Bost to create complementary beverage programs with an emphasis on clean, hyper-local ingredients. For Campfire, Simpson and his bar team have created several holiday-inspired cocktails that lean into winter warming spirits and spices:

SPREZZATUR | Jeremy Simpson
Irish whiskey
Sweet vermouth

An equal parts blend of Dolin Rouge Sweet Vermouth & Pierre Ferrand Curacao is infused with biscotti tea and whole cranberries. Inspired by a cozy, wintery Manhattan, this drink is extremely comforting with familiar flavors of cinnamon, orange peel and toasty pastries. Sprezzatura is the Italian word for a type of nonchalance, or a carefully studied carelessness.

COUNTRY ROADS | Jeremy Simpson
Rye whiskey
Roasted chestnut
Apple Brandy

Chestnuts are roasted over the woodfire grill and then sous-vide into a rich demerara syrup. Averna and Laird’s apple brandy are the modifiers, infused with fresh marjoram for three hours, adding an herbaceous quality to the cocktail. We finish the drink with Workhorse Rye’ Spiced Apple Cider bitters and finish with a sprig of fresh marjoram.

At Cadiff-by-the-Sea all-day café, Waverly award-winning Beverage Director, Eric Johnson, draws inspiration from the Christmas tree — using its branches and needles to infuse Gin for a subtle balsam wreath aroma and taste that will transport imbibers to the Pacific Northwest (where he grew up, and Yule trees are grown).

The Grass Skirt

At whimsical San Diego tiki oasis, The Grass Skirt Bar Manager, Tony Coxum, employs fat-washing to infuse Rye Whiskey with decadent pork fat, for a cocktail with a velvety texture and depth of flavor inspired by a traditional Christmas pork roast.

See you there, San Diego! Cheers!
