A Dynamic Duo Leading the Way

Aldea’s kitchen is now helmed by Executive Chef Augustin “Augie” Saucedo, whose 20+ years in San Diego’s top kitchens (think The Marine Room and Estancia La Jolla Hotel & Spa) have made him a master of Cali-Baja cuisine.

Chef Augie brings a passion for sustainable, locally sourced ingredients and a love of Baja’s coastal traditions, drawing on his family’s heirloom recipes to craft a menu that feels both rooted and innovative.

Joining him is Beverage Director Herman Ochoa, whose expertise in agave-forward cocktails and Baja-inspired mixology is raising the bar.

With a legacy tied to Tijuana’s restaurant scene, Herman’s mission is to make every sip as memorable as the food. Together, they’re crafting a dining experience that feels distinctly La Jolla while honoring the bold spirit of Baja.

The Menu: A Love Letter to Baja’s Bounty

Aldea’s revamped menu is all about celebrating the flavors and stories of the region. Seafood lovers will love dishes like the chermoula-marinated Spanish octopus or Baja oysters with a green apple mignonette.

Meanwhile, Chef Augie’s smoky chicken al pastor tacos and Jalisco-style birria are perfect for those craving a taste of Mexico’s culinary heritage.

Seasonal entrées, like the Faroe Island salmon baked en papillote and finished tableside with an agave glaze, showcase Chef Augie’s creative flair, while the Aldea burger elevates a classic with an artisanal touch.

And don’t sleep on the cocktail program! Highlights like the Garden Margarita—a refreshing mix of cucumber juice and celery bitters—and the El Toro, a bold concoction with mezcal cask coffee liqueur and blackberry syrup, are as inventive as they are delicious.

Aldea in La Jolla is located at 1251 Prospect St. They’re open for dinner Tuesday through Thursday from 4 PM to 9 PM, Friday and Saturday from 4 PM to 10 PM, and weekend lunch and dinner on Sunday from 12 PM to 8 PM.
