Cali-Mediterranean Eatery ‘Kebab Craft’ Opens At Liberty Public Market

Anchoring Liberty Public Market’s westside expansion, Kebab Craft is the newest name to join the food hall’s roster of powerhouse eateries.

The fast-casual concept, centered around made-to-order Mediterranean-Middle Eastern combos, is the first proprietary venture for entrepreneurial sweethearts (Executive Chef) Paul and Shannon Salhany who, despite their young age (26 and 23 respectively), have over a decade of combined hospitality experience and endless ambition.

Shannon and Paul Salhany first met whilst simultaneously pursing degrees in hospitality: Shannon, an undergraduate at San Diego State University’s Payne School of Hospitality & Tourism Management, and Paul, native Frenchman attending a foreign exchange program out of San Diego.

With lifelong dreams of becoming a chef, Paul had already built-up an impressive résumé by the time he arrived in the States. After graduating from culinary school in Paris, Paul landed a highly-competitive apprenticeship at the French Senate cooking for politicians and diplomats, followed by another work-study at Hôtel Concorde Montparnasse.

He went on to work for iconic confectioner, Ladurée, starting with a position at the company’s New York City tearoom, where Paul learned the ins-and outs-of restaurant management. Upon returning to Paris, he enrolled at Vatel International Business School to major in Hotel Management, which ultimately brought him to study abroad in San Diego.

Bonding over their shared studies, Paul and Shannon’s chance encounter sparked a lifetime connection. Today, the husband-wife-duo celebrate the launch of their first business venture, Kebab Craft. As Executive Chef, Paul taps into family heirloom recipes and his Parisian culinary training, while Shannon harnesses her background in hotel management to handle the day-to-day operations.

Confident in their program of bold, health-forward dishes, the Salhany’s hope to expand the business with future brick-and-mortar locations throughout San Diego.

Budding philanthropists with a passion to pay it forward, Kebab Craft redistributes a portion of every sale to San Diego Food Bank and will look to support additional organizations impacting homelessness in San Diego.

On the Menu

Filling a Mediterranean void in Liberty Public Market’s lineup, Kebab Craft’s menu is centered around made-to-order Mediterranean-Middle Eastern combos with a fresh, SoCal-inspired twist. The “build-your-own” menu concept flaunts an approachable lineup of plates, bowls and pitas.

Pairing guests’ choice of protein—from options such as sliced-to-order shawarma, gyro, steak kebab and made-from-scratch falafel—with unlimited topping and sauces, the eatery’s customizable offerings bridge traditional flavors with modern interpretations and wholesome ingredients.

Standalone chef signatures include the ever-popular Cali Kebab, a kebab-filled twist on the quintessential French fry-stuffed burrito, and Loaded Pita Chips, an over-the-top Mediterranean-style nacho platter.
