The New J/Wata Temaki Bar Will Redefine The Way You Think About Sushi

Junya Watanabe, the legendary chef of uber successful restaurants Rakiraki Ramen and Pokirrito, is about to open the doors of J/Wata, a new dining experience all about the art of the hand roll.

Born in Tokyo, Watanabe just keeps giving Japanese joy to the people of San Diego, and we love him for it.

Anything this meal master gets his hands in quickly becomes a gold mine. And the glorious rolls of J/Wata will be no exception, we’re sure.

J/Wata’s menu will feature a variety of premium hand roll selections, many with locally-sourced fish, specially harvested seaweed, exclusive craft sauces, and Watanabe’s signature sushi rice.

Anticipated menu favorites include:

  • Flame blistered eel from Japan
  • Gindara Saikyo-Yaki (grilled marinated black cod with miso)
  • Signature uni handroll
  • Flame blistered prime sirloin

Not to fret. Our guy wouldn’t dare forget about one of our most favorite parts of a Japanese spot; there will be a selection of authentic Japanese beer, sake, wine and tea.

But when we say it’s all about the roll, we mean it.

The aesthetic of the 1,500 square-foot space will be modern and minimalist with tones of grey, black, natural woods and stainless steel, providing a backdrop that will really showcase the intricacy and beauty of the hand rolls.

The space will also incorporate elements reminiscent of the iconic fish markets in Tokyo.

They chose the right guys for the job, too. Design Opera is an expert in bringing visual splendor to all varieties of projects. Check out their recent work at Pali Wine Co. in Little Italy and Monkey King in the Gaslamp Quarter.

With the best of the best in Japanese cuisine and some killer digs from an amazing design crew, it’s no doubt that the masses will surface once J/Wata opens on Convoy Street in Spring 2017!
