East County is getting a white tablecloth steakhouse this August. The Heritage Steakhouse is opening on the sixth floor of the Legacy Building at Lantern Crest, bringing hand-cut aged steaks and classic New York steakhouse sophistication to the region.

Leading the kitchen is Executive Chef Meredith Manée, whose career spans Four Seasons, Hotel del Coronado, and The Ritz-Carlton Maui.

A Career Built for this Moment

Meredith Manée brings more than 25 years of experience to The Heritage Steakhouse, shaped by a career that reads like a tour of the country’s finest hospitality brands.

Her path began with an internship at the Four Seasons Resort in Santa Barbara, leading to over a decade with the brand across Newport Beach, Lanai, Houston, Beverly Hills, and Denver.

From there she brought her expertise to San Diego at the Hotel del Coronado, spent more than four years at The Ritz-Carlton Maui, and most recently served as Executive Chef at The Bridges at Rancho Santa Fe.

Her culinary style is refined, ingredient-driven, and deeply rooted in technique – a minimal, sophisticated approach that lets the quality of the ingredients do the talking.

Prime Cuts and Seasonal Flavors

The focus at Heritage Steakhouse is exactly what you’d hope for from a serious steakhouse.

Hand-cut USDA Prime, Certified Angus, and Wagyu steaks, aged a minimum of 28 days and sourced from select ranches, are prepared in a high-temperature broiler to achieve a perfect crust, maximum tenderness, and deep flavor.

The broader menu balances precision with creativity, emphasizing clean, seasonal ingredients and thoughtful composition over fleeting culinary trends.
