Puesto Cares Partners With Scripps Cancer Care

Puesto, the award-winning Mexican artisan kitchen with multiple locations in California, is proud to announce its partnership with Scripps cancer care.

An exciting collaboration with Scripps cancer care

Since founding Puesto in 2012, the family-owned restaurant group has been devoted to promoting a healthful lifestyle by sourcing only the highest quality ingredients, from the produce to the protein, and they are thrilled to deepen their commitment to delicious healthy eating through their partnership with Scripps, a regional leader in providing expert personalized cancer care.

To bring this exciting collaboration to life, Puesto worked with a Scripps dietitian to develop the Vegetable Mole Verde Taco, now available on menus at all San Diego locations. For the next year, a portion of the proceeds from this taco, and some other select menu items, will go directly to support Scripps cancer care.

Scripps cancer services drew the attention of Puesto for its significant contributions to the San Diego community. Taking a patient-centered approach in providing personalized care for each cancer patient’s unique needs, Scripps offers a comprehensive range of services, including advanced treatments and technologies, clinical trials, patient support services, screenings and more.

Additionally, Scripps has various locations available throughout San Diego County, making it possible for patients to receive care close to home.

“This cause is close to the Puesto family. With team members who have personally been affected by cancer, either through their families or themselves, we are proud to partner with an organization that is working to provide patients with the utmost care and support through their recovery,” says Eric Adler, Co-Founder and Managing Partner at Puesto.

The Vegetable Mole Verde Taco

The Vegetable Mole Verde Taco, available at San Diego Puesto locations through October 11th, is a unique well-balanced vegetarian and gluten-free taco made with roasted cauliflower and broccoli, broccoli kale mole verde, flax seed salsa matcha, panela cheese and hemp seeds.

Made with Puesto’s signature organic, non-GMO, heirloom blue corn stone-ground tortillas and jam packed with nutrient-dense whole foods, the taco was developed with dietary and nutritional needs in mind. The roasted cruciferous veggies are loaded with vitamins and minerals, while the mole verde delivers a bright flavor without the added ingredients of traditional black mole.

“It was an incredible experience collaborating with a Scripps dietitian on this recipe. Scripps provided their focus on nutrition and the benefits of eating healthy, balanced meals, and our culinary team provided our expertise in creating delicious tacos. We’re very excited to be able to offer a menu item that reflects our respective values and doesn’t compromise when it comes to taste,” explains Puesto’s Vice President of Culinary, Chef Erik Aronow.

As a restaurant founded and built with the support of its community, Puesto has always prioritized giving back, donating more than $1 million to local charities and causes, through its giving program Puesto Cares. In addition to Scripps in San Diego, Puesto is also partnering with Stanford Health in the Bay Area and the University of California Irvine in Orange County to support additional communities surrounding the restaurant group’s other locations.
