If you’re the kind of person who gets excited about themed holiday experiences rather than just tolerating them, we’ve got your guide to the biggest and best holiday pop-up bars across San Diego. We’re talking fully themed pop-ups with immersive décor, festive menus, and limited-edition cocktails that give you multiple reasons to visit different neighborhoods throughout December. Cheers!

The Lafayette Hotel

If you’re looking to jump into the holiday vibes with both feet, it’s hard to find a better place to do it than the Lafayette Hotel! You’ll find trees, tinsel, and hot toddies galore around every corner of the hotel this time of year.

A special Holiday Tea Service will be available in the hotel’s lobby Monday to Friday from noon to 4 PM. For $65 per guest, a festive spread of tea and small bites will be provided – pinkies up! ⁠

Evenings at The Lafayette will see hosts of Christmas carolers singing on the steps of the iconic colonial-style property to welcome guests. ⁠

And Friday and Saturday evenings, 8 PM to 10 PM, Night Moves Santa will be holding court in the lobby, granting holiday wishes and taking requests. ⁠

Snowed In is Back at Fort Oak!

Jingle all the way to Fort Oak this holiday season for Snowed In, a Christmastime cocktail bar with serious winter wonderland vibes. This is one of our favorite traditions for a jolly holiday celebration!

Through the double doors of the Art Deco bar, festively outfitted tipplers are transported into the magical world of all things holiday cheer, where glittering white snowflakes and iridescent sparkles swirl around you, and Santa’s good tidings offer a welcome reprieve from the daily grind.

Polite Provisions Leans Into Full-On Tinsel Town

Polite Provisions is doing its annual holiday takeover, and they’re going full maximalist with the decor – Santa’s helpers are decking out every corner, so expect tinsel everywhere.

The North Park spot is bringing back their classic House Mulled Wine, plus adding a new holiday cocktail called Merry Christmas, Ya Filthy Animals with apple brandy, sweet vermouth, and salted caramelized Italian red bitter.

We appreciate that they’re leaning into the festive mischief vibe and tossing any sense of subtlety out the window. Polite is always a good idea for a cocktail with friends, but the holiday takeover atmosphere makes it special.

Santa is Sippin’ at The Grass Skirt This Christmas

Sippin’ Santa is officially back at The Grass Skirt, delivering a tropical, playful, and retro-kitsch Christmas pop-up to Pacific Beach. 

Throughout the month of December, The Grass Skirt will be serving a wide selection of limited-edition specialty cocktails.

Highlights include Coco Ho Ho Ho ($18), Sugar Plum Mai Tai ($18), and the classic Sippin’ Santa ($18)  alongside the seasonal food menu by Chef Brian Redzikowski.

Share plates of Pork Katsu Baos ($10), Korean Short rib Tacos ($18), and Okonomiyaki fries ($11) with friends and family under the warm light of tiki torches this holiday season.

Clicquot in the Clouds Opening for the Holidays

Clicquot in the Clouds is opening to the public for the first time this holiday season, and it’s a solid setup – an elegant champagne lounge on the 32nd floor of the Seaport Tower with sweeping views of the skyline and bay.

Created in partnership with Moët Hennessy, the lounge features Veuve Clicquot by the glass at surprisingly good price points, plus Dom Pérignon if you’re feeling fancy.

The Craving

The cocktail program includes drinks like the Bad & Boujee and Wagyu Smoked Old Fashioned, paired with bites like Sanctuary Oysters and Grass-Fed Beef Sliders with Truffle Parmesan Frites.

On New Year’s Eve, they’re going until 1 AM with handcrafted cocktails, gourmet bites, and live DJ sets leading up to midnight. No reservations required, just show up (21+ only).

False Idol Going Full Island-Style Holiday Mode

False Idol is decking out their tiki oasis with colorful and cheeky holiday decor, which honestly sounds like the perfect break from traditional winter celebrations. The Polynesian decor and rum-stacked walls get a festive upgrade while keeping that tropical vibe intact.

They’re bringing back the Hot Buttered Rum for the season, plus adding a new Jingle Bird cocktail with Jamaican Rum, Campari, strawberry, pineapple, and lime. We’re into the idea of celebrating the holidays island-style with rum-based tropical cocktails instead of the usual winter drink lineup.

It’s a different vibe from most holiday bars, which is kind of the appeal – if you want festive but tropical, this is your spot.

Nason’s Beer Hall Transforms Into a Holiday Wonderland

Nason’s Beer Hall is transforming into a full-blown holiday wonderland, and they’re not holding back – we’re talking 700 ornaments, 75 jumbo ornaments, and 200 feet of tinsel.

Beyond the decor, they’ve got a lineup of specialty cocktails worth checking out.

The Sleigh My Name combines Tito’s Vodka, Skrewball Peanut Butter Whiskey, Banana Liqueur, Espresso, and Banana Foam. There’s also Jolly Good Rye with Whistle Pig Rye and Maple Cinnamon Syrup, Jingle Juice with Maestro Dobel Reposado and Apple Cider, and Cousin Eddie’s Hot Cocoa with Woodford Bourbon and Mr Black Cold Brew Coffee Liqueur.

Jingle Bar Takes Over Molly’s in Mission Beach

Starting in early December, Molly’s transforms into what they’re calling a Pink Winter Wonderland in partnership with Showtime Presents: Jingle Bar. Floor-to-ceiling pink holiday décor, themed cocktails, festive bites, games, karaoke, and family-friendly programming on weekends.

If you’ve been looking for holiday vibes that lean playful and Instagram-friendly rather than traditional red-and-green, this is it.

The pink theme gives them room to get creative with cocktails and décor in ways that standard holiday aesthetics don’t allow. It’s kitsch done intentionally, which is a completely different energy than kitsch done accidentally.

“Clicquot Inn The Snow” Makes its Rancho Santa Fe Debut

Toast the season with champagne flights, gather around for fondue, enjoy welcome pours on arrival, and melt into refreshing spa treatments at Rancho Santa Fe’s most unexpected winter escape.

“Clicquot Inn The Snow” makes its Rancho Santa Fe debut at The Inn, transforming their Croquet Cottage into a private winter retreat from December 4–7 and December 18–21, 4–7pm.⁠

Miracle on Coast Highway 101 Hits Union Encinitas

Union Kitchen & Tap in Encinitas is unveiling its largest holiday transformation yet, running from late November through New Year’s Day.

Festive décor throughout the space, specialty cocktails served in themed mugs (which presumably you can take home), and a Christmas Day Prime Rib Dinner for $45.95 (dine-in only, reservations required).

Union Encinitas has the space to really commit to a transformation, and the coastal highway location means you can combine this with a beach walk or other Encinitas activities. It’s not just about the holiday programming – it’s about the setting amplifying the experience.

Margaritaville’s Yo Ho Ho-liday Tavern Pop-Up Coming to Gaslamp

Margaritaville Hotel San Diego is doing something different for the holidays – a pirate-themed pop-up called Yo Ho Ho-liday Tavern taking over LandShark Bar & Grill.

Think nautical holiday decor, live pirate appearances, and festive cocktails with a coastal twist. The menu includes creative dishes like “The Kraken” sandwich and “Davy Jones’ Linguini,” plus handcrafted cocktails like the Chai Old Fashioned and The Garnet Garland.

It’s definitely a departure from your typical holiday bar scene, which might be exactly what you’re looking for if traditional holiday setups aren’t your thing. Worth checking out if you’re downtown and want something a little more playful.

Holiday Odysea Returns to The Overlook

Holiday Odysea is back at The Overlook inside the Hilton San Diego Bayfront, and it’s set up through December 31. The pop-up collaboration with Grand Marnier brings cozy winter décor and bay views, which is a solid combo for a holiday drink.

The cocktail lineup includes the Grand Noël Cocoa, Marnier Glow Spiced Toddy, Aged & Grand Old Fashioned, and Frosted Fruit Sangria. The space is decked out with twinkling snowflakes, red-and-white décor, and enough coastal winter charm to make it feel festive without overdoing it.

One Door North

One Door North in North Park is ringing in the winter season with a rustic-chic Après All Day Ski Chalet pop-up that transforms the space into a cozy mountain lodge right in the heart of sunny San Diego.

The venue gets reimagined with rustic wood, pine greenery, soft lantern lighting, and vintage alpine décor alongside layered textures of camel and saddle-brown leather, cowhide prints, buffalo plaid, and draped Overland sheepskin furs. Featured offerings include a DJ lounge with chill après beats and warm lighting, a ski lift photo booth with a fur ski lift chair, faux snow, alpine background, and vintage goggles, a vintage shot ski wall, and semi-private chalet cabins with wool plaid blankets and lanterns perfect for date nights and intimate gatherings.

Seasonal dishes, cocktails, and mocktails complement the experience. The pop-up works for private events including holiday gatherings, birthday parties, wedding celebrations, and team outings, with options for both intimate bookings and large-party reservations.
