Park Hyatt Aviara Welcomes New Executive Pastry Chef

Park Hyatt Aviara is about to get even sweeter! The luxury resort in Carlsbad has welcomed Charlotte Almayrac as its new Executive Pastry Chef, bringing Michelin-starred experience and innovative pastry artistry to its award-winning dining program.

A World-Class Pastry Talent

Trained at the prestigious Ferrandi École Française de Gastronomie in Paris, Chef Almayrac has worked in some of the world’s finest kitchens, including Pavillon Ledoyen (3 Michelin stars), Grand Véfour (2 stars), and Le Dame de Pic (1 star).

Most recently, she was Assistant Sous Chef at the 3 Michelin Key Hotel Bel Air in Los Angeles, where she led a team of 12 in crafting refined, high-end pastries.

At Park Hyatt Aviara, she’ll oversee the pastry programs at Ponto Lago and Ember & Rye, as well as in-room dining, catering, and special events—bringing her signature mix of elevated technique, creativity, and locally inspired flavors to every bite.
